moyo is a successful venture because it is African; and celebrates all that is Africa. It is a unique African brand, offering sophisticated African food and luxurious décor, with wishee-washee washing patrons', story tellers, mbira players and strolling minstrels.
The Food and Wine pairing Concept
The idea of pictures to describe a grape's flavour is a first in the wine world. They are an evolution in wine appreciation. The idea of using these flavour profiles in breads is a first in the wine and food world.
The two together make this a first ever wine and food pairing using deconstructed wine flavour profiles. It is a historical, artistically subtle way of identifying the scientific process of the art of taste. It is idealistic but filled with neat tools and great techniques.
Each grape is distinctive, characterised by specific flavour profiles. I have taken the flavour profile of each grape and designed artwork to highlight these grape personalities. I have used bread, the global stable diet which is a medium with a neutral taste and form and added the personality flavours of each grape to create the food match.
This is unique pairing of food and wine because it highlights the basic flavours in grapes and how your palate recognises and identifies them. The synergy works because the flavours in the bread come from each grape varietal. Together this food and wine match strikes a powerful chord.
The concept of using bread as a medium for the translation of flavour was selected because it is an inexpensive ingredient that can be shaped visually and textually to combine the flavours in wine.
Juliet Cullinan gave a list of ingredients to Jason Lurie, a partner at moyo and the resulting shape and flavours of the breads were created by Nathascha Xisto Das Nerves and prepared by Adrian Fiocchi and Marlene Lumu.
The artwork, which sets the tastes in emulsion, was conceived by Juliet Cullinan in the form of sketches with wine ingredients peculiar to each variety. The images are arresting in an intellectual, cosmopolitan, arty and innovative way, yet set out the wine tasting credentials. The images were designed and printed in Paris. I launched them to the international media at the Gourmet Voice Food and Wine Conference in Cannes in January 2006.
In the words of AA Gill, "A contemporary is someone who shares your tastes, style and experience. Someone modern tells you what taste and style you should be experiencing." This food and wine pairing reflects the appetites of creative taste. They are a pairing with a new interpretation of grape flavours in successful, avant-garde way.
The Black and White theme
Black and white is the perennial uniform of the 20th century. It is the binary extremes of our time, ying-yang, and offers a platform for the premier of young-up-and-coming black vintners. There is a sense of a new beginning coupled with a new sense of optimism.
